Q. Where are you from?

A. I’m from Georgetown. I was born in Brooklyn, N.Y., but I never lived there. We moved here as soon as I was born.

Q. What do you like about Georgetown?

A. I was born and raised here. Everyone I know is still here.

Q. How long have you worked here at Fish Tails?

A. I started as a cook when I was 20. Now I’m a bartender and a manager.

Q. What’s the biggest difference between being a cook and a manager?

A. I have more responsibilities. I work longer hours. I’m not in the hot kitchen all day.

Q. Did you enjoy cooking?

A. Yes, I still do.

Q. Do you still cook at certain times?

A. Yes. My favorite dish to cook is something I made up, a fried buffalo wrap.

Q. What’s in the fried buffalo wrap?

A. You have a chicken breast, and you batter it and fry it. Then you saute some onions and some jalapenos and put them in a taco shell with some cheese. Then you deep fry it.

Q. How did you come up with that dish?

A. I was playing around in the kitchen when I was hungry one day. We’ve sold a lot of those ever since then.

Q. Are you married?

A. No!

Q. Is Fish Tails an easy place to meet people?

A. We usually have a crowd of regulars in here every day.

Q. What are some of the favorite drinks here?

A. People like sucker punches and white Russians.

Q. Are you thinking of adding other items to the menu?

A. We are thinking of adding T-bone steaks and ribs to the menu.
