Joan’s Date Bars
I learned to make these in High school home economics class
Ingredients
Crust
¾ c soft shortening
1 c (scant) brown sugar
1 ¾ c sifted flour
½ tsp baking soda
1 tsp salt
1 ½ c rolled oats
Ingredients
Filling
3 c cut up dates
¼ c sugar (less if dates are sugared)
1 ½ c water
Method
Crust and Filling.
Blend shortening and sugar. Add the other ingredients and mix well. Spread one half of the mix on the bottom of a 9 by 13 pan (or for thicker bars, use an 8 by 8).
Mix filling ingredients in a saucepan. Cook over low heat, stirring constantly until thick, about 10 minutes. Cool
Spread with cooled filling, put rest of mix on top,
Bake at 400 degrees for25-30 minutes
