Heidi Vukov’s Coconut Macaroons
This recipe is reprinted, with permission, from Heidi Vukov’s new cookbook, Bonjour Y’all
It’s one of her mother’s traditional Christmas cookies. Makes 3 Dozen
Ingredients
½ cup egg whites (about four eggs)
2 cups sugar
1 ½ cups chopped almonds
3 ½ cups sweetened shredded coconut
1 teaspoon vanilla
Method
Pre heat oven to 300 degrees F
Prepare cookie sheet by coating with nonstick spray
Beat egg whites until foamy with electric mixer using whip attachment; Add sugar gradually.
Beat until stiff peaks form
Fold in all remaining ingredients
Scoop dough the size of a heaping teaspoon onto sheet each cookie about two inches apart from the other.
Bake 20 minutes
