Claire Byun’s Creme de Menthe Cookies

Ingredients
1 cup softened butter
1 cup brown sugar
3/4 cup white sugar
2 eggs
2 tbls crème de menthe liqueur
3 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
3 cups mint chocolate chips (or chocolate chips)
Method
Cream together butter and both sugars until combined. Slowly beat in eggs and crème de menthe liqueur.
Combine flour, baking soda and salt in separate bowl. Slowly add to wet mixture and add chocolate chips until everything is combined.
Drop tablespoon-sized balls of dough onto ungreased cookie sheet (or sheet lined with parchment paper), approximately 2 inches apart.
Bake for 8-10 minutes at 350 degrees F. Cookies should look slightly undone but will continue baking on cookie sheet once out of the oven. Let cool for about 5 minutes, then transfer to wire rack.
